Revised Compendium of Microbiological Criteria for Foods
Food Standards Australia New Zealand (FSANZ) have released a revised Compendium of Microbiological Criteria for Food. This national guidance document is designed to support decision-making about food and processes with reference to microbiological testing. It features updated guidance and microbiological criteria for dairy products, infant formula, and follow-on formula. Additional information on environmental monitoring, Clostridium botulinum and Shigella spp. is also included. Working with state and territory dairy regulators, the Dairy Food Safety Victoria Science team led the review and update of the dairy section.
